If We’re Being Brutally Honest…

Sometimes I’m too tired to think about dinner. Sometimes all I can muster the energy to throw together on a Tuesday (or Sunday, or Friday…you get the idea) evening is a box of my beloved Annie’s mac & cheese (well, shells & cheese) with some added frozen kale and a “healthy” dollop of Sriracha in all of it’s potassium sorbate glory.


I can’t help it, cooking every night is a difficult thing to do. I’d venture to say that cooking dinner became even more challenging when I started feeding my sweetheart, because while I’m delighted to eat a bowl of simple lentil soup several times per month, I can’t say that he shares my enthusiasm in the legume department. It’s alright, I don’t share his sentiment when it comes to the meat department either. Cooking a dinner that’s both able to satisfy my need for wholesome and meatless meals, all the while conquering his aversion to textures unfamiliar is not the breeziest of walks in the park.

Mac and cheese has become the easiest and quickest way to serve up something tasty, filling, and full of veggies. Here are some great additions to your basic box o’ mac and cheese:

  • Wilted Kale
  • Caramelized Onions
  • Sriracha (big DUH)
  • Fresh Herbs (Parsley, Rosemary, Sage, etc.)
  • Thawed Frozen Corn or Peas
  • Sautéed Bell Pepper
  • Parmesan Cheese
  • White Wine (in the sauce)
  • Broccoli Rabe

You get the idea.
